Entrée options include smoked pork terrine with pickled red currant, apple, Madeira wine jelly and herb croutons, beef carpaccio with shaved Parmesan, watercress and truffle, poached prawns with citrus Marie Rose emulsion, chargrilled baby cos lettuce and pangrattato, burrata with compressed melon, blackberry, Amarena cherries and pistachio, or whipped ricotta with potato gnocchi, sautéed forest mushrooms and beurre noisette. Main options include turkey roulade with cranberry sauce, Brussels sprout and sage butter sauce, chargrilled beef sirloin with mash, wild mushrooms and truffle jus, crispy skin barramundi with chargrilled fennel and leek, green mussel and shellfish beurre blanc, crispy pork belly with butternut pumpkin purée and cherry and maple glaze sauce, or saffron cream ricotta cannelloni with cavolo nero kale and hazelnut praline.
