At Palatino in Bordeaux, the Manager de salle guarantees excellent, consistent and fast service, supervises guest welcome, optimises table turnover and average spend, manages daily floor operations, hygiene, labour costs, schedules, stock, orders, cash and equipment. The role also covers recruitment, onboarding, training, team cohesion, collaboration between kitchen, bar and floor, and partnership with the Assistant Manager. The position is a permanent management contract with two consecutive days off, competitive salary and bonus.
