Reporting to the Chef de Partie, this role is responsible for small-scale production at the cafe and works alongside a small team that assists with opening and closing the facility. Duties include prepping, assembling, cooking and cooling food products according to Railtown Cafe recipes and health code specifications; preparing cold prep items, sauces, soups, stews and other cooked or partially cooked items; washing, peeling, slicing and mixing ingredients; portioning and arranging food; stove, oven and fryer cooking; wrapping, labelling and rotating stored food using FIFO procedures; and maintaining the cleanliness and organization of food storage, preparation areas, the kitchen, equipment and dish area. The role requires a motivated and positive individual who is comfortable in a fast-paced environment and demonstrates a can-do attitude, strong work ethic and high standards of quality and cleanliness. Desired qualifications include high school graduation or equivalent, culinary school or equivalent work experience, basic knowledge of kitchen equipment, procedures, safety and sanitation regulations, FoodSafe Level 1, general knowledge of food items and ingredients, and the ability to read and execute recipes in grams. High volume, quick casual experience is preferred, or fine dining experience with an eagerness to work in a new, larger format. The position involves standing and moving for 4 to 8 hours, frequent lifting of up to 25 pounds and occasional lifting of up to 100 pounds.
